Pumpkin muffin makeover

Ok, off the beaten path of traveling, I haven't made some of my pumpkin muffins in awhile. REALLY I haven't for those who know me. So, I am on a bean wagon, trying to encorporate more beans into our diet. I have found a fabulous website and a book to help me in this area. (I love books too!) Ok, so my muffin reciepe calls for 1 and 1/3 cup oil ( I think) well tonight I altered it to one can of white beans pureed. Yup you read it right, BEANS! I am so excited I can't tell you how excited I am. they are so good! I didn't add any of the oil just one can of white beans pureed in my blender. Now, I won't use the can version unless I have too, because of too much sodium. I am going to try to make my own beans for the occasion. I am still working on that one. But how exciting to have made your muffins with you own pumpkin, soft wheat flour that you ground youself, granulated sugar crystals and white beans. Can you tell I am excited. Clayton loved them. No one knew that there are beans in there. (until they read this) I am just excited!

That is so awesome. Do you just supstitute the same amount of beans as oil? and will pinto beans work? I would love to hear more about it.

Now that's one I never heard before!
I used my Kitchenaid yesterday and I thought of you! For some reason every time I use it, it reminds me of you. LOL!
